Ingredients
- 1 Tbsp Vegetable Oil
- 1 Large Onion
- 2 Cloves of Garlic
- ½ Tsp Ground Cumin
- 750g Sweet Potatoes
- 400ml Coconut Milk
- 650ml Vegetable Stock
- 25 Drops Foodie Flavours Cardamom Flavouring
- Salt & Pepper to taste
Instructions
Servings 4 / Prep time 10 mins / Cook Time 25 mins
- Peel and chop the sweet potatoes, onion and garlic.
- Heat the oil in a large saucepan and add the onions, stirring until softened.
- Stir in the garlic and cumin and fry for 2 mins.
- Add the sweet potatoes and coconut milk.
- Simmer for 5 mins and add the vegetable stock.
- Bring to a boil, then reduce to a simmer.
- Cover with a lid and leave for 15 mins, or until the sweet potatoes are soft.
- Season with salt and pepper and add the cardamom natural flavouring.
- Blend to a smooth consistency and serve.
