Carrot Cake Blondies

Soft, Spiced and Topped with Cream Cheese. A Blondie Bake with Carrot Cake Charm

These carrot cake blondies bring all the warm, comforting flavour of a classic carrot cake into a soft, chewy traybake. The blondie base is flavoured with Carrot Cake Natural Flavouring and folded with chopped walnuts for a deliciously nutty bite, then finished with a smooth cream cheese frosting full with vanilla. A final sprinkling of walnuts adds just the right amount of crunch, making these blondies perfect for afternoon treats, bake sales, or sharing with everyone who loves a cosy bake.

Ingredients

Blondies

  • 170g Unsalted Butter
  • 150g Light Soft Brown Sugar
  • 150g Caster Sugar
  • 1 Large Egg, plus 1 yolk
  • 35-40 Drops Foodie Flavours Carrot Cake Flavouring
  • ¼ Tsp Sea Salt
  • ¼ Tsp Baking Powder
  • 200g Plain Flour, sifted
  • 85g Dark Chocolate Chips
  • 85g Chopped Walnuts, plus extra for topping

Cream Cheese Frosting

  • 175g Unsalted Butter, at room temperature
  • 175g Icing Sugar
  • 300g Full Fat Cream Cheese
  • 1 Teaspoon Gorilla Vanilla Extract

Servings 12 / Prep time 20 mins / Cook time 25 mins

Blondies

  1. Preheat the oven to 180°C/160°C fan and line an 8 inch square tin with greaseproof baking paper.
  2. Melt the butter and set aside to cool.
  3. In a large mixing bowl mix together the sugars. 
  4. Pour in the melted butter and mix for 2 minutes.
  5. Next add the egg, yolk and carrot cake flavouring and mix until just combined. 
  6. Sift in the flour, baking powder and salt and mix until smooth.
  7. Fold in the chocolate chips and chopped walnuts until evenly distributed. 
  8. Spread the mixture evenly across the bottom of your prepared tin and bake for approx. 25 minutes. The blondies should have started to crack around the edges and have a slight wobble. 
  9. Leave the blondies to cool in the tin and then chill in the fridge for at least 4 hours, ideally overnight.

Cream Cheese Frosting

  1. With a handheld or stand mixer, beat the butter for 3-5 minutes until pale and fluffy. 
  2. Add the icing sugar and beat again for 2 minutes.
  3. Drain the cream cheese if needed and add it into the buttercream along with the vanilla extract, mixing until smooth.  
  4. Remove the blondies from the tin and spread the frosting on top. 
  5. Sprinkle on some chopped walnuts to decorate. 
  6. Slice and enjoy!
