Coffee Kisses

These coffee kisses are light, crisp biscuits infused with rich coffee flavour and sandwiched together with a smooth, velvety coffee buttercream. Each bite delivers just the right balance of sweetness and bold coffee warmth, making them the perfect partner to your afternoon brew. Elegant and comforting, they’re ideal for sharing, gifting, or simply enjoying a quiet moment with a hot drink.

Biscuits

  1. Mix together the sugars and flour in a mixing bowl.
  2. Cut the butter into small chunks and add it to the bowl.
  3. Rub the butter into the mixture using your fingertips until you have a breadcrumb consistency.
  4. Slightly beat together the egg and coffee flavouring.
  5. Make a well in the centre of the dry mixture and add the egg.
  6. Mix together to form a ball of dough.
  7. Divide the dough into 32 balls and place them onto a baking tray lined with either a silicone mat or non-stick baking paper, leaving a gap between each. You will probably need to do this in two batches.
  8. Put the baking tray in a preheated oven at 180°C/160°C fan and bake for 12-15 mins.
  9. Remove from the oven and leave the biscuits on the tray for 5 mins, then transfer to a wire rack to cool.

Buttercream

  1. Soften the butter in the microwave for approx. 20 secs, being careful not to melt it.
  2. With a handheld or stand mixer, beat the butter for 5 mins until pale and spreadable.
  3. Add the icing sugar and beat again until combined.
  4. Add the coffee flavouring. Beat the buttercream for 5 mins. If the buttercream is too stiff to pipe, add a little milk.
  5. Pipe the buttercream onto the underside of half the biscuits.
  6. Place the remaining biscuits on top, sandwich together and serve.
