This cola float chocolate traybake is a nostalgic treat that brings old school vibes straight to your kitchen.

A soft chocolate sponge infused with organic cola flavour is topped with a vanilla double cream layer, reminiscent of the iconic float combination you know and love. Finished with a glacé cherry, it’s a fun, feel good bake that’s perfect for parties, sharing, or reliving a little sweet nostalgia.

Sponge

  1. Preheat the oven to 180°C/160°C fan and line a 20cm x 30cm baking tin with greaseproof baking paper.
  2. Cream together the golden caster sugar and baking spread in a bowl until light and fluffy.
  3. Add the eggs, along with the cocoa powder and cola flavouring and beat together to combine.
  4. Fold in the flour until fully incorporated.
  5. Add the mixture to the baking tin and bake in the oven for approximately 25 mins.
  6. Leave to cool in the tin for 10 mins then transfer to a wired rack to cool.

Cream Topping

  1. Add the cream, vanilla extract and icing sugar to a bowl and whip together until it starts to hold its shape.
  2. Spread the whipped cream on top of the cooled sponge
  3. Slice into 12 portions and add a cherry on top of each slice.
