Serves 6

1. Put the sugar into a saucepan with 200ml of the water and heat until the sugar dissolves to form a clear syrup.
2. Pour the syrup into a jug with the remaining 400ml water.
3. Whisk in the lemon juice, vodka, Foodie Flavours Pineapple (or flavour of your choice) and enough gel food colouring to create a vibrant hue to the liquid.
4. Stir well and chill in the fridge for at least 6 hours but preferably overnight.
5. Pour the liquid into the bowl of your ice cream churner and let it churn.
6. When the sorbet begins to hold its shape whisk the egg white until it just begins to firm up then spoon it into the sorbet and continue to churn until it is firm.
7. Spoon the churned sorbet into a container, level and cover with greaseproof paper then transfer it to the freezer for several hours.
8. Take the sorbet out of the freezer for 5-10 minutes before scooping.

Serving Suggestions

Try serving your sorbet in a brandy snap basket or an ice cream cone. Alternatively, pile it into a serving glass with some complimentary fresh fruit or perhaps a drizzle of coconut rum liqueur just for the grownups.

Tips

• Ensure that the bowl of your churner has been frozen for the correct length of time before attempting to churn your sorbet (check the instruction manual).
• Also ensure that your sorbet liquid is suitably chilled (6°C or below). If it is above this temperature then your sorbet is unlikely to set.
• Use the base sorbet recipe and add in any of the Foodie Flavours high strength range of flavours. Have some fun!
• Sorbet does not have a long shelf life. Use it up within a week.
