Blackcurrant American Pancakes

Bold, Berry Packed and Beautifully Purple. Pancake Stacks with a Fruity Pop

These blackcurrant pancakes are soft, fluffy and bursting with fruity flavour, drizzled with golden syrup and crowned with fresh berries. Perfect for lazy weekend mornings with the family, a show stopping brunch with friends, or simply a cheerful way to start your own day.

Once you've nailed the base recipe, the possibilities are wide open! Swap blackcurrant for blueberry, raspberry or even mango to create your own signature stack in whatever colour and flavour takes your fancy.

Ingredients

  • 200g Self Raising Flour
  • 2 Tbsp Caster Sugar
  • 1 Tsp Baking Powder
  • 2 Large Eggs, beaten
  • 30g Unsalted Butter, melted (plus a little extra for cooking)
  • 175ml Milk
  • 40 Drops Foodie Flavours Blackcurrant Flavouring
  • Purple/Red Gel Food Colouring (optional)
  • Fresh fruit and syrup to serve

Instructions

Servings 4 (approx 8 pancakes) / prep time 10 mins / cook time 20 mins

  1. In a large mixing bowl, stir together the flour, caster sugar and baking powder.
  2. Make a well in the centre of the dry ingredients and add the beaten eggs, melted butter, milk and Blackcurrant flavouring.
  3. Starting in the centre, whisk together the ingredients until smooth.
  4. If colouring the pancakes, add the food colouring and mix until evenly distributed.
  5. Heat your frying pan on a medium setting and add a small amount of butter to grease the pan.
  6. Add a large spoonful (approx. 2 tbsp) of batter to the pan to form a pancake.
  7. Cook the pancake for approx. 2 mins. Small bubbles will start to show on top and the sides will look set.
  8. Flip the pancake and cook for a further 2 mins.
  9. Repeat with the remaining batter until it has all been used.
  10. Stack your pancakes to serve and top with fresh fruit and syrup.
