Mole’s Favourite Berry Cake

Soft, Gentle and Full of Flavour. A Storybook Cake Made for Little Celebrations

This layered vanilla sponge berry cake is as whimsical and heart warming as the story that inspired it, Charlie Mackesy's The Boy, The Mole, The Fox and The Horse.

Light vanilla sponge layers are stacked with clouds of cream, each one delicately flavoured with raspberry, blueberry, and blackcurrant, creating a beautiful surprise in every slice. Finished with swirls of cream and a scattering of fresh berries, it’s playful, comforting, and full of charm.

Perfect for children’s parties or any occasion that calls for a cake that feels magical, kind, and made to be shared.

Ingredients

Sponges

  • 300g Caster Sugar
  • 280g Unsalted Butter, at room temperature
  • 2 Tbsp Vegetable Oil
  • 300g Self Raising Flour, sifted
  • 3 Large Eggs, at room temperature
  • 100ml Whole Milk
  • 1 Tbsp Gorilla Vanilla

Mascarpone Frosting

Servings 10-12 / Prep Time 30 mins / Cook Time 25 mins

Sponges

  1. Preheat the oven to 180°C/160°C fan. Lightly grease and line three 6 inch round cake tins with greaseproof baking paper.
  2. Cream together the sugar, butter and oil in a bowl for 2 mins, until light and fluffy.
  3. Add the eggs along with a large spoonful of the flour and mix.
  4. Mix in the vanilla extract and milk.
  5. Fold the remaining flour into the mixture.
  6. Divide the mixture equally between the tins and bake in the oven for 25-30 mins.
  7. Leave the sponges in the tins for 10 mins, then remove and cool on a wire rack.

Mascarpone Frosting

  1. Add the mascarpone to a large bowl and whisk to loosen.
  2. Pour in the cream and whisk until you have soft peaks.
  3. Sift in the icing sugar and whisk until you have stiff peaks.
  4. Divide the frosting evenly into 3 separate bowls and stir a different flavouring into each.
  5. Spread one bowl of frosting on top of the first sponge layer and top with another sponge. Then repeat for the remaining layers.
  6. Add your fondant mole character on top of the cake and decorate with fresh berries and mint leaves.
