Raspberry Mousse

Pretty in Pink and Made to Share. A Dessert for Lovers.

This raspberry mousse is light, creamy, and unapologetically romantic. Flavoured with raspberry and coloured a delicate pink, it’s smooth, airy, and melts beautifully on the tongue. Finished with clouds of whipped cream, fresh raspberries, and a scattering of chocolate shavings, it’s the kind of dessert made for sharing spoonfuls, lingering glances, and sweet moments.

  1. Break up the chocolate into a large microwave safe bowl and add the cream.
  2. Heat for 40 seconds and stir until smooth. If there are still some lumps of chocolate, pop the mixture back into the microwave for 20 seconds and stir. Repeat if necessary.
  3. Stir in the raspberry flavouring and pink colouring. Set aside.
  4. In a separate bowl, whisk the egg whites until frothy then gradually add the sugar. Whisk on a high setting until stiff peaks are formed.
  5. Add a large spoonful of the egg white mixture to the chocolate mixture and gently stir it in to loosen it.
  6. Fold in the remaining egg white mixture until combined.
  7. Add the mousse to your serving glasses and refrigerate for 4 hours to set.
  8. Serve as a simple mousse or top with whipped cream and fresh raspberries.
