Dubai Chocolate Cookies

Decadent, Gooey and Vibrantly Pistachio. Luxury Cookies with Dubai Dessert Energy.

These Dubai chocolate cookies are anything but ordinary. Each cookie hides a crisp nest of kataifi pastry at its centre, wrapped in soft, gooey chocolate chip dough and filled with pistachio flavoured white chocolate coloured a striking green.

The result is a rich blend of textures and flavours melty, crunchy, nutty and sweet. Feeling every bit as indulgent as the desserts you’ll find in Dubai’s bakeries and cafés. A standout bake for when only something unforgettable will do.

Ingredients

  • 150g White Chocolate
  • 3 Tbsp Vegetable Oil
  • Green Gel Food Colouring (optional)
  • 50g Kataifi Pastry (Dried & Shredded)
  • 30 Drops Foodie Flavours Pistachio Flavouring
  • 100g Dark Soft Brown Sugar
  • 80g Golden Caster Sugar
  • 120g Unsalted Butter, at room temperature
  • 1 Large Egg, at room temperature
  • 225g Plain Flour
  • 50g Cocoa Powder
  • 1 Tsp Baking Powder
  • ½ Tsp Bicarbonate of Soda
  • Pinch of Salt
  • 100g Milk Chocolate Chips
  • 50g Dark Chocolate Chips

Instructions

Servings 6 / Prep time 20 mins, plus 60 mins chill time / Cook time 12-15 mins

  1. Break up the white chocolate into a microwave safe bowl.
  2. Melt the chocolate in the microwave in 30 second intervals, stirring in between until the chocolate has melted.
  3. If colouring the chocolate, add green gel food colouring and mix until evenly distributed. 
  4. Stir in the vegetable oil, then mix in the pistachio flavouring
  5. Fold in the kataifi pastry and pop the mixture in the fridge for 15 mins to set slightly. 
  6. Divide the mixture into 6 balls and place them in the freezer for 45 mins.
  7. Preheat the oven to 200°C /180°C fan and line a tray with baking paper or a silicone baking mat.
  8. In a large bowl, cream together the butter with the sugars for 2-3 mins using a stand mixer or electric whisk.
  9. Add the egg and beat again until combined. 
  10. In a separate bowl mix together the flour, cocoa powder, baking powder, bicarbonate of soda and salt. 
  11. Once the dry ingredients are mixed, add these into the butter and sugar mixture. Mix until a dough is formed. 
  12. Mix in the chocolate chips. 
  13. Divide the cookie dough into 6 equal balls. 
  14. Flatten each portion of dough and place a ball of pistachio mixture in the centre of each. Fold the cookie dough over the pistachio mixture and form a ball.
  15. Place the balls of dough onto your prepared baking tray, making sure to leave space for the cookies to spread. You may need to bake the cookies in two batches. 
  16. Bake in the oven for 12-15 mins.  
  17. Leave the cookies on the tray to cool. 
  18. Best eaten fresh and slightly warm.
