Butterscotch Rice Crispy Bars

Chewy, Gooey, and Drizzled with Chocolate – A Butterscotch Packed Lunchbox Filler

These butterscotch rice crispy bars are everything you love about this classic treat, gooey pockets of mini marshmallows in every bite. Now with added rich butterscotch flavour.

Topped with a smooth drizzle of chocolate, they’re chewy, sweet, and just the right amount of sticky. Perfect for sharing, snacking, or that sweet craving – no baking required.

Ingredients

  • 150g Unsalted Butter
  • 450g White Mini Marshmallows
  • 200g Rice Krispies (or similar)
  • 20-25 Drops Foodie Flavours Butterscotch Flavouring
  • 50g Milk Chocolate

Instructions

  1. Line a 20cm x 30cm tin with greaseproof baking paper. Leave enough paper hanging over the edge of the tin to easily remove the crispy treats when set.  
  2. Melt the butter in a large saucepan.
  3. Add the mini marshmallows (leaving 50g aside) and gradually heat on the hob, continually stirring until the marshmallows have melted and you have a smooth consistency.
  4. Remove from the heat and mix in the butterscotch flavouring.
  5. Pour in the Rice Krispies and stir until they are evenly coated. 
  6. Fold in the remaining marshmallows but avoid overmixing. You don’t want the marshmallows to fully melt.
  7. Add the mixture to your prepared tin and spread it out evenly, gently pressing it down. 
  8. Cool at room temperature for 2 hours. 
  9. Once set, slice into 15 even portions and drizzle with melted chocolate.
